Protein Balls

  • 1 large jar peanut butter
  • 3 cups oats
  • 5 Tbsp honey
  • 1 cup chocolate chips
  • 1 cup flax seeds
  • 1/2 cup protein powder
Mix everything in large bowl and make into balls. Makes about 40 balls.

Avocado Baked Egg

  • 2 avocados, sliced in half
  • 4 eggs 
  • shredded mozzarella cheese
  • 4 slices cooked bacon, crumbled 
Preheat oven to 425. Spoon out some of the middle of avocado. Place in muffin pan. Crack an egg into each avocado pit. Sprinkle with cheese and bacon pieces. Salt and pepper to taste. Bake for 14-16 minutes. Makes 2-4 servings. Try adding Sriracha!

Baked Oatmeal To Go

  • 2 eggs
  • 1 cup brown sugar
Whisk together. Then add, 
  • 3/4 cup unsweetened apple sauce
  • 1.5 cups whole milk
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 Tbsp ground cinnamon
Whisk together. Then add, 
  • 3 cups rolled oats
  • 2 tsp baking soda
Whisk together. Let sit 30 minutes. Preheat oven to 350. Spoon into muffin pan (makes 12; 1/4 cup each). Add favorite toppings (shown here with blueberries and chocolate chunks). Suggested toppings: nuts, craisins, raisins, berries, dark chocolate, and many more! Bake for 20-25 minutes. Approximately 170 calories per piece before adding toppings.

Stuffed Tomatoes

  • 4 tomatoes 
  • 1/2 lb ground beef, browned
  • 4 eggs
  • Parmesan cheese
  • salt and pepper, to taste 
Preheat oven to 350. Slice the tops off each tomato and core out the inside. Spoon the browned ground meat into each hollowed out tomato. Crack 1 egg on each and sprinkle with cheese. Place in 9x9 baking dish and cook for approximately 30 minutes or to desired degree of doneness of eggs. Salt and pepper to taste. Makes 2 servings.

French Toast Bake

  • 1 stick butter, melted
  • 1 cup brown sugar
  • 1 loaf Texas toast
  • 4 eggs
  • 1.5 cups milk
  • 1 tsp vanilla
Melt butter and add sugar. Mix well. Pour butter in bottom of 9x13 pan. Beat eggs, milk, and vanilla. Lay single layer of toast in pan. Spoon half of egg mixture on top; add another layer of toast and the rest of egg mixture. 

*Cover and chill in fridge overnight. 

Bake at 350 for 45 minutes, covered for the first 30. 

Using a spatula, remove desired portion and flip to serve. Sprinkle with powdered sugar and/or cinnamon if desired. Serve with warm maple syrup. Makes 6 servings.

Spinach and Goat Cheese Frittata

  • 1 tbsp olive oil
  • 1/2 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 (5 oz) bag fresh spinach 
  • 8 large eggs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 oz log goat cheese
Preheat broiler. Heat oil in large ovenproof skillet over medium heat. Add onion and garlic; cook 4 minutes or until tender and golden. Gradually add spinach and cook 2 minutes or until spinach is wilted. Beat eggs, salt, and pepper in a large bowl. Pour over spinach in skillet. Crumble goat cheese over frittata. Cook over medium heat 2 minutes or until edges begin to set. Lift edges so uncooked eggs flow underneath. Broil 2-3 minutes or until center is set. Let stand 3 minutes before cutting. Makes 4 servings.

Banana Protein Pancakes


  • 1/3 cup vanilla whey protein powder (optional)
  • 1/3 cup whole grain pastry flour or all-purpose flour
  • 1/4 cup quick-cooking oats
  • 1 packet (1 gram) sugar or sugar alternative
  • 1 tsp hain pure foods featherweight baking powder
  • 1 banana, mashed
  • 1 large egg
  • 1 tbsp fat-free plain yogurt
Mix all dry ingredients in a large bowl. Mix all wet ingredients together, separately. Fold in and lightly mix all ingredients together until consistent texture. Pour on griddle or hot pan and cook until golden brown on each side. Serve with syrup, sparingly, if desired. Add additional slices of banana on top as garnish. Makes 4 servings. 

Fruit Filled Protein Shake

  • 1/2 tsp Crystal Light drink mix
  • 10 oz 1% or skim milk
  • 1/2 banana
  • 1 cup berries of your choice
  • 1 tbsp pineapple juice or a few pineapple chunks
  • 2 scoops whey protein powder
Place all ingredients in a blender and blend until smooth consistency. 

Scrambled Eggs with Smoked Salmon, Asparagus, and Goat Cheese


  • 1 tbsp butter
  • 8 stalks asparagus, woody bottoms removed, chopped into 1" pieces
  • salt and black pepper to taste
  • 8 eggs
  • 2 tbsp fat-free milk
  • 1/4 cup crumbled fresh goat cheese
  • 4 oz smoked salmon, chopped
Lightly beat eggs and milk together and pour into buttered pan over medium heat on the stove. Add asparagus and salmon at the same time as eggs and milk. Let cook until eggs look almost done, then add goat cheese. Serve and enjoy! Makes 2 servings. 

Smoked Turkey Hash

  • 2 tsp vegetable oil
  • 1 large onion, coarsely chopped 
  • 1 small green bell pepper, coarsely chopped
  • 1 small red bell pepper, coarsely chopped 
  • 1 lb cooked red potatoes, cubed
  • 1 smoked turkey drumstick (1 lb), skinned, boned, and cubed
  • 1 egg white, lightly beaten
  • 2 tbsp chopped parsley
  • 1/2 tsp dried thyme 
  • 1/8 tsp salt
  • 3 tbsp fat-free milk
Mix all ingredients and cook over vegetable oil in a pan on medium-high heat. Makes 4 servings. 

Yogurt and Berry Parfait


  • 6 oz Form Tofu 
  • 1 Tbsp Honey
  • 3/4 tsp Vanilla Extract
  • 1/2 tsp Lemon Zest
  • 1.5 cups Fat-Free Plain Greek-style Yogurt
  • 1 cup Raspberries
  • 1 cup Blueberries
  • 1/2 cup homemade or Low Fat Granola
Makes 2 servings. 

Protein Cottage Cheese

  • 1 cup cottage cheese
  • 1 tbsp flavored protein powder 
  • 1/8 cup sliced almonds 
  • 1/2 cup mixed berries
  • 1 tsp fat-free milk
Makes a single serving.

Cinnamon Roll Pancakes

Pancakes:
4 cups all purpose flour
8 tsp baking powder
2 tsp salt
4 cups milk
4 tbsp vegetable oil
4 large eggs, slightly beaten

Cinnamon Filling:
1 cup butter, melted
1.5 cup brown sugar, packed
2 tbsp ground cinnamon

Cream Cheese Glaze:
1/2 cup butter
4 oz cream cheese
1.5 cups powdered sugar
1 tsp vanilla

Pancakes: Mix dry ingredients in one bowl and wrt ingredients in another. Mix together until everything is moistened and has a smooth consistency. Heat griddle to 325 and grease it. Pour desired size pancake in griddle. Use piping bag and staring in the middle, make a swirl to the outside. Wait to flip the pancake when there are lots of bubbles. Once turned, the cinnamon swirl will melt and create craters the cream cheese glaze will then fill in.

Cinnamon Filling: Mix the three ingredients. Place in ziploc bag and snip the corner off the edge to use as a piping bag.

Cream Cheese Glaze: Melt the butter and cream cheese in microwave safe bowl and then stir together. Whisk in the powdered sugar and vanilla. Add a little milk if needed for consistency.

Very Berry Smoothie

  • 3 tbsp Vanilla non-fat Yogurt
  • 1 cup fresh or frozen berry mix
    • Blueberries
    • Blackberries
    • Strawberries
    • Raspberries
  • 3/4 cup Organic Soy Milk
  • 1/4 cup Water
  • 2-4 Ice Cubes
Blend and serve. Makes 1 large serving.

Orange Dreamsicle Smoothie

  • 1 cup Orange Sherbert
  • 1 cup Orange Juice
  • 4 tbsp Vanilla non-fat Yogurt
  • 1 peeled and de-seeded Tangerine
  • 4-6 ice cubes
Blend and serve. Makes 1 large serving.
